Au Gratin Potatoes 

Au Gratin Potatoes Ingredients:

1 Pound Russet Potatoes, Cut into 1/8” Slices,

2 Cups Heavy Cream

2 Whole Eggs, beaten

Kosher Salt

Fresh Ground Black Pepper

1 Cup Grated Parmesan Cheese

2 Cups Shredded Gruyere Cheese

Au Gratin Potatoes Method of Preparation:

  1. Preheat your oven to 350° F.

  2. Bring a pot of water to a boil over high heat.

  3. Once the water is at a rolling boil, salt the water liberally.  Make it taste like the ocean.

  4. Add the sliced potatoes and cook for about ¾ minutes.  You only want to cook the potatoes half way.

  5. Once the potatoes are par-cooked, remove them from the boiling water and place them into ice cold water.  This will stop the cooking process, so your potatoes don’t become mushy.

  6. Mix together the heavy cream and eggs.  Season with salt & pepper.

  7. In you baking dish, spread a small layer of the egg cream mixture on the bottom.

  8. Evenly shingle slices of potatoes to cover the surface of the baking dish.

  9. Ladle a small amount of the egg cream mixture over the potatoes.

  10. Sprinkle with grated parmesan and shredded gruyere cheeses.

  11. Repeat this process until you reach the top of your baking dish or until you run out of ingredients.

  12. Once you have finished layering your potatoes, egg cream mixture, and cheeses, liberally sprinkle the top layer with shredded gruyere cheese.

  13. Place baking dish into your preheated oven and bake for about 10-15 minutes or until the cheese on top becomes brown and bubbly.
